Protein Cake with Red Cherries and Flexseed Protein

The Ingredients:

5 eggs, 1 cup (2 dcl) fructose (about 150g), 1 yogurt, 1 cup melted coconut oil, 2 cups flour (270g): 120 spelt flour and 150 regular flour, 1 backing powder, 400-500g red cherry, dr. Oetker liquid vanilla, some Ceylon cinnamon powder, some ground lemon peel, 2-3 teaspoons linseed (flaxseed) protein powder

The Process:
Separate egg yolks. Whisk egg whites. Mix yolks with fructose. You can reduce fructose from 150 gr to 120 gr to cut down on calories. Add stevia in droplets-it gives sweetness but will not change the taste or add calories.

Mix both types of flour with baking powder and protein in the bowl. Prepare other ingredients.

Cherries should be well drained from juice if they were frozen.

Add the egg yolks with sugar to the egg whites and gently stir with a spatula. Stirring manually slowly and gradually add the other ingredients: oil, yogurt, vanilla, cinnamon, lemon and flour mixture.

It is essential to combine all stirring slowly.

Preheat the oven to 200 degrees. Pour the mixture in the baking pan (35 x 20) and fill it with the cherries evenly. You can sprinkle it with the unsweetened cocoa powder and make waves on the cake using a fork. Reduce the oven to 180 degrees and bake for 40 minutes. When it's done leave it at least halfway to cool down.
